Ingredients:

1 3/4 cup cake flour, spooned and leveled, divided 1/8 tsp. ground cinnamon 1/4 tsp. Kosher salt 1/2 tsp. baking soda 1 tsp. baking powder Pinch ground nutmeg 1/2 cup chopped pistachios 1/2 cup chopped toasted pecans 1 large egg, at room temperature 1 1/2 tsp. pure vanilla extract, divided 1/2 cup unsalted butter, at room temperature 1 cup packed dark brown sugar 1/2 cup confectioners' sugar 1/4 cup finely chopped candied pineapple 1 c. finely chopped Maraschino cherries, well drained 1/2 tsp. brandy 1 to 2 tsp. milk Start by preheating the oven to 350 degrees. In a large bowl, mix the dry ingredients: cake flour, cinnamon, Kosher salt, baking soda, baking powder, nutmeg. Put the pistachios and pecans with ½ cup of flour in a separate bowl. In a separate mixing bowl, mix the butter and sugar. Then add in the egg and vanilla. Ensure that the mixture is light and fluffy, then add in the flour mixture. Add the nuts and then add the fruit. Scoop the cookie dough onto a non-stick baking sheet so that they're evenly spaced. Bake for about 15 minutes. Let them cool and enjoy! Have a happy holiday season!
